Day Program Holds 2nd Annual "Iron Chef" Competition
LifePath's
Montgomery County adult day program held its 2nd annual Iron Chef
competition October 16, 2007. Staff competed by making recipes using
pasta as a main ingredient. Consumers at the day program helped
MC and guest volunteer judges chose the winners. The winning dish
was prepared by program nurse Suzanne Maloney with her Creamy Peach
and Pineapple Dessert, second place was Jill Henning with Spinach
and Sun Dried Tomato Penne and third place went to day services
manager Stephanie Vincent with Kugel. The winning recipe is included
below.
Creamy
Pineapple & Peach Dessert

servings; 26 min 20 min prep
1
cup orzo pasta
1
(5 1/3 ounce) package giant ladyfingers
1
(14 ounce) can crushed pineapple, well drained,reserving 1/3 cup
juice
1
(28 ounce) can sliced peaches, drained and rinsed under cold water
1
cup ricotta cheese
1
3/4 cups cold milk
1
package instant vanilla pudding (4 serving size)

cups Cool Whip or whipping cream, whipped

In a large pot of boiling water, cook pasta for about 6 minutes
or until tender but firm.
- Drain,
rinse under cold water and drain again.
- Set
aside.
- Meanwhile,
line an 11 by 7 inch baking dish with lady fingers.
- Cut
lady fingers if necessary to cover bottom of dish.
- Brush
lady fingers with reserved pineapple juice.
- Reserve
about 8 slices of the peaches for garnish.
- Layer
remaining peaches over lady fingers.

Sprinkle with pineapple.
- Place
ricotta cheese in a large bowl.
- Whisk
until smooth.
- Add
milk and instant pudding mix.
- Whisk
for about 2 minutes until slightly thickened.
- Stir
in cooked orzo pasta.
- Pour
mixture over pineapple layer.
- Refrigerate
for about 20 minutes.
- Cover
pasta layer with Cool Whip (or whipping cream).
- Garnish
with reserved peach slices.
- Refrigerate
for 1 hour.

LifePath
Residents "Dance with the Stars" at Annual Recognition Banquet
Approximately
240 guests, including LifePath residents from Lehigh and Northampton
counties, their families and LifePath staff members gathered at
the Northampton Memorial Community Center on October 5, 2007 to
have fun and recognize consumer accomplishments over the past year.
Six LifePath residents were awarded plaques in honor of their achievements.
Those winners were: personal achievement - Jonathan Rios; vocational
achievement - Victor Diaz; positive role model - William Smith;
congeniality - John Michael Mulhearn; most passionate interests
- Nikki Iasiello; and most helpful - Dale Miller.
The
event, themed, "Dancing with the Stars," also included dinner and
dancing with Eileen Walden, dance specialist and teacher, and some
of her dancers who demonstrated the hustle, meringue, cha-cha and
salsa while Sound Surge DJs spun the tunes.

Former
Philadelphia Phillies' Hall of Fame Third Baseman, Mike Schmidt
to Be Keynote Speaker at Annual LifePath Luncheon

Arguably
one of the best third baseman to ever play the game, Michael Jack
Schmidt will help celebrate the 10th anniversary of the LifePath/PICPA
(Pennsylvania Institute of Certified Public Accountants) Thanksgiving
benefit and awards luncheon as the keynote speaker on Wednesday,
November 21, 2007 at the Holiday Inn Conference Center, Fogelsville,
PA.
This
annual event assists LifePath in raising much needed funds to help
support its programs and services for individuals with developmental
disabilities throughout the Lehigh Valley and southeastern Pennsylvania.
Schmidt
played for the Philadelphia Phillies from 1972 through his retirement
in 1989. A three-time National League Most Valuable Player, 12-time
All-Star, 10-time Gold Glove recipient and one of the "Sporting
News'" players of the decade for the 1980s, Schmidt was elected
to the Baseball Hall of Fame in 1995, receiving 96.5% of the votes.
The
cost to attend the luncheon is $85 per person or $850 per table
of ten. Sponsorship opportunities are available. Schmidt will be
available to meet with guests, signing copies of his recent book
and posing for photographs from 11am till 12pm prior to the event.
No outside memorabilia will be permitted, but cameras are welcome.
